ABSTRACT

 

                The proteic sediment (break) is a by-product that results from wort clarification, which, at present is not capitalized in our country, being evacuated in wastewaters.

This paper proposes a quality evaluation of obtained break from two beer factories and also its usage, because of its high content in protein and mineral substances, in manufacturing recipes of pets’ (cats, dogs) food.
