ABSTRACT

 

An experiment was made regarding the micro-biological behaviour in storage, of fresh sliced and boiled sliced carrots packed in modified atmosphere. The gas used was a mixture of 70% N2 and 30% CO2.the packed samples behaved micro-biologicaly well.
