ABSTRACT
A new probiotic food was obtained, Granolact™, comprising of lactic acid bacteria enriched germinated wheat flakes. The originality of the biotechnological scheme consists in the wet moisturing stages that alternate with the dry moisturing ones as well as the short surface treatment, with various starter cultures of lactic bacteria selected as having antimicrobial activity (Lactobacillus plantarum 13GAL, 14GAL, 15GAL and Lactobacillus brevis 16GAL, 17GAL). It was elaborated an in vivo experimental design to study this functional food. The in vivo tests on the holoxenic rats was standing out the probiotic character of the GranolactTM product materialized through a better occupation of adherence sites from the intestinal epithelium, therefore a more effective competition in relation with possible pathogenic agents in this ecosystem.
